Nose: Opens tight but rewards patience. Once it breathes, green olive brine comes through loud and clear - earthy, vegetal, and salty in all the right ways. Backed by cooked agave, oak, citrus, and a touch of minerality. Palate & Mouthfeel: Medium-full mouthfeel with good structure. Cooked agave leads, followed by green apple tartness (malolactic in feel), black pepper, anise, peppermint, and a buttery softness. The brine from the nose doesn’t carry through as strongly here - this leans more spice forward. Finish: Soft and warm, with lingering oak and spice. Almost reads like a restrained añejo finish. Final Thoughts: Nose first, this had me hooked - the olive brine note is bold and unapologetic, and I’m a sucker for that kind of character. The palate goes a different direction, landing more in the spice and herbal camp, with just a trace of the brine. The warmth and structure of the finish round it out well. Old school leaning, with some edge - I’m into it.
