Nose: Agave comes first, wrapped in oak and touched by cherries and orange. Alcohol shows a bit of heat, while cinnamon, black pepper, and mint weave in spice and freshness. Palate & Mouthfeel: The mouthfeel is medium with a slight grip, carrying agave alongside caramel and oak. Cinnamon and black pepper add structure, balanced by orange and grapefruit brightness. Butter softens the edges, while chile pepper gives it a lively push of spice. Finish: Long and steady, with sweet and spicy notes lingering. The sweetness deepens as it stretches out, carrying a layered complexity. Final Thoughts: This stands out for its balance of structure and nuance. Sweetness, spice, and citrus interplay across a textured palate, rewarding thoughtful sipping with depth that reveals itself slowly.

Nose: sweet cooked agave / molasses/ chocolate/ vanilla/ caramel/ nutmeg/ baking spices / banana / tea / anise / cream soda Taste: sweet cooked agave/ molasses/ vanilla/ peppermint/ caramel/ banana/ lime / anise / tea / nutmeg/ chocolate/ cream soda Finish: medium viscosity mouthfeel and lingering sweet cooked agave and peppermint spicy notes linger and prevail through the whole taste with a hint of spearmint and even more vanilla on the last swallow. This anejo is fantastic. So much amazing barrel flavors and sweet cooked agave. The sweetness and vanilla/chocolate notes over run the spicy and leave a sweet minty fresh final end to the taste. Highly recommend this.

Another great one from Xolo. On the nose you get the barrel. Yes, you can pull some agave but I get whiskey, apple cinnamon and baking spices. On the palate, very oaky with a whiskey forward taste. I get cooked agave, baking spices and a touch of chocolate. The finish is good and the ABV works pretty well with this expression. I do love Xolo. Joven is still my favorite but I will continue sipping on this one.

This Añejo has been aged in Anerican White Oak (ex-bourbon) barrels for 18 months. As with all Xolo expressions this Añejo is 46% ABV - 92 proof and comes in a 1 liter bottle. - Right away I can smell the bourbon barrel notes sitting on top off of some cooked agave. There some agave sweetness and then the barrel notes kick in. It’s cinnamon, cloves, nutmeg and cracked black pepper. There some notes of dried fruit and barrel char. It’s an aromatic nose that’s part sweet and part spicy. - On the first sip it’s nice and spicy with some pleasant sweetness. There are dense flavors of buttery cooked agave, leather, molasses and dark chocolate with a hint of bitters. There’s an earthy note akin to chipotle peppers in adobo sauce. The barrel provides a spicy and slightly dry finish. The sweetness and dry barrel notes linger nicely. - Overall this Añejo is amazing. The cooked agave is still very present while the barrel imparts a lot of additional flavors. It’s the perfect mix of agave, barrel influence and proof. The higher proof adds a nice kick and keeps the flavors bright and dense. This is an excellent Highland Añejo! Great job Ernesto!

Whiskey agave touch of cinnamon oak vanilla and I get butterscotch and caramel in the smell it’s nice My mouth feels oily, and you can definitely sense the higher proof with a lot of whiskey barrel notes along with clove, baking, spices, cinnamon agave. I kinda lose the butterscotch and caramel, which is fine. Hang time is good. Not real long finishes with the higher proof whiskey flavor and it’s very end. I get a return of some butterscotch and caramel really kind of fun.
