Very citrus forward with brine and cinnamon and earthy tones. Very solid tequila.
Initially rated this an 84 when I first tried it. Tonight in the AMM tequila fermentation class, we let it rest for about 20 minutes before trying it, and man, it opened up flavors I didn’t taste the first time. Definitely a solid tequila, so I had to adjust my score!
Aroma of agave, nectarine and minerals. Flavor of agave pepper and minerals with a similar finish.
Aroma/Taste: The aroma opens with wet cement and limestone, accompanied by citrus notes of lime and lemon, and undertones of stone fruit like cherry. The nose also reveals cooked agave and anise, with a subtle trace of dill. On the palate, the taste is characterized by sweet cooked agave, black tea, and the soft spice of white pepper. Finish: The finish is well balanced, featuring hints of fresh cut grass, cola, mint, sweet agave, and licorice. It's a very good finish with a lingering sweetness that hangs around for a while. Overall: When tasted blind, this tequila stands out as another well-balanced blanco in this tasting. It's enjoyable neat and would also be excellent for elevating a cocktail.
TMM Blind Tasting:2025 The aroma opens with a burst of lemon and lime citrus, joined by ripe pineapple, strawberry, spearmint, and a light floral lift. On the palate, cooked agave, butteriness, subtle berry and floral notes, with a touch of anise. The finish is gentle and soft, with lingering butter, faint citrus, floral tones, and a light thread of cooked agave.

Tasting high brix level agave, white sugar, mint, mineral, vanilla, Flavor: sweet agave bomb, mineral, white sugar, mint Pallet: medium/long, leaves sweetness on the tongue, clean, flavor stays a while, easy to drink. When I smelt this, I smiled. It’s all that I love in a tequila. It’s not fancy or flashy, it’s just delicious. I know they’re not re-inventing the wheel making it, but they are making good tequila the right way. YUM!
I’ve tasted this twice blind and given it very low (recent) and very high (older) scores. I’m averaging the scores for now. I’ll have to sit down with this to see why such a disparity for me. Blind AMM Tasting: Green aromas with herbs and pine. Strong herbal flavor—maybe sage or thyme, and some sweet mint. VERY thick mouth. Blind TMM tasting: Nice earthy agave aromas that follow with similar flavors including some minty notes. Nice medium tingle that feels just slightly overproof. (Surprised I rated this so much higher than the high proof. Will need to revisit both).
Early 2025. Pleasant aroma. Some agave, pepper, fruit. Taste is also nice, finish is a bit light. I gave this only a 5 for value. Score 84. Second tasting TMM blind (10/25): Wow! The aroma hit me like a fruit bomb. Mostly, grapefruit, lemons, and oranges. I’m not pulling out any of my common aromas. The taste is also very citrusy and fruity to me, without much of an agave presence. Slight pepper. Sweet finish. This is a very unique expression to me. Score 84.
updating my review... lote B0524 bottle 0968 revisited feb 17 2026 on the maestros del agave zoom class I let it open almost an hr (worked out that way). agave forward, lime, minerality citrus, mint really enjoyed it! ______ tasted blind tmm apr 2025 revisited oct 2025 tmm blinds deducted points for cost $83. it's 2 to 3 times the price of the others in the blinds
Slight agave on the nose, roast agave in the mouth with a fair amount of sweetness. Short buzzy finish. 2nd time around and not blind adds a few points
AMM Blind Notes: Aroma: Super green vegetable cooked agave bomb. Some hints of asparagus and mint. The nose made me say wow. Definitely the best aroma so far. Palate: much of the same as the nose lots of minerality, some grassy notes. Finish: great finish little to no burn pretty lengthy Original Notes: Tried this for the first time at Grover’s event in Rhode Island. Awesome nose with lots of fresh citrus like grapefruit and lemon, cooked agave and a hint of mint. Fantastic earthy taste with a ton of cooked agave sweetness and some olive brine. Very oily mouthfeel. A good finish not overly complex. It’s pricey but it’s definitely not just a fancy bottle and package. Originally gave it an 87, mostly got docked for value, blind gave it a 91, said value was higher, but I’m going to split the difference and go with the price that’s local to me so value isn’t super high. Overall, a very well made tequila.

Tasted at Sip Tequila Fest By far my favorite aspect of this blanco is the nose. It is incredibly expressive with notes of lime, fresh grapefruit, orange peel, herbaceous notes like rosemary/mint/anise, and cooked agave. On the palate I found brine, citrus, black pepper, white pepper, more herbaceous notes, subtle fruity elements & ample amounts of cooked agave. The finish is exceptional. This expression from Alto Canto was my favorite unaged tequila I tasted at Sip Tequila Fest. I ended up coming home with a bottle. More notes to come!

Alto Canto comes to us from a single brand NOM, NOM1636, in the Sierra del Tigre mountains (9000 ft elevation) outside of Guadalajara. They use organic agave, mountain spring water, brick ovens, tahona, wild malolactic fermentation in wood vats with fibers, copper stills, and then rested for 25 days in a white oak container. The nose is very enjoyable. It’s mildly dense buttery cooked agave with hints of malolactic fermentation and some nice minerality and muted peppers. A tad of agave sweetness punches through as does some citrus and honeysuckle. The agave and minerals are the most pronounced aromas. It’s not overly complex but the aromas that are present are clean and enjoyable. On my first sip, I get the cooked agave, minerals, and some white pepper. On the second sip, the agave is more buttery and the pepper is less pronounced. On subsequent sips I get minerals, a hint of a light vegetal note, and a touch of natural vanilla and cinnamon. It has a medium body and finish. Overall this is a high-quality blanco tequila that I’d be happy to sip on daily. ————————————————————————— Rated Blind: N: pine, wet earth, salinity T: bright, green agave, pine, vegetal, white pepper finish
Aroma: Dry and dusty nose. Metallic minerals. Lime zest. Subtle vegetal note, cooked cauliflower? Sweet candied agave. Lightly fragranced florals. Flavor: Peppery entrance that lingers. Medium + body. Hint of vanilla to the agave sweetness. Salinity. Lacks some of the complexity of the Still Strength, but a pleasant profile.
Tasted in AMM fermentation class, circling back to rate. Very good sipper. Aromas of agave & minerals with slight mint, citrus & flowers. Flavors seem much more pronounced with all of the above plus pepper & cinnamon with slight, short brine and vanilla finish.
Cooked agave, black pepper, a little bit of minerality including limestone, some mint. A bit intense overall, but a great sip. Vanilla and agave on the finish. Nature on full display here.

Creamy, peppery, with a nice kick. Would not pay the marked up prices it’s going for right now but really enjoyed my drink tonight! Will seek out a bottle and update my score when I feel the price is more reasonable.

Great nose taste and finish I had this in a AMM blind so good. Tonight in a class with Grover I see it should have rated higher!!
