Nose: Sweet agave leads the way, accompanied by a subtle lactic note likely from the high altitude fermentation. There’s a gentle warmth of cinnamon and vegetal earthiness that adds depth. Palate & Mouthfeel: The tequila coats the palate beautifully, delivering sweet agave right up front. A hint of ethanol quickly gives way to a warming cinnamon spice that echoes the nose, joined by white pepper and an herbaceous undertone. There’s a bright, almost effervescent character that adds lift - hard to describe, but it brings a fresh energy to the sip. Interestingly, the lactic quality from the nose doesn’t carry over to the palate. Finish: Clean and bright with lingering notes of cinnamon spice and a pleasant tingle on the tongue. Overall Impression: A well crafted tequila with a lot of character. It’s both enjoyable and complex, offering a nice balance between sweet, spicy, and herbal elements.

Tasted at Sip Tequila Fest A nose of citrus, cooked agave, and herbs. The palate over delivered relative to the nose. Sweet potato, mint, star anise, orange, lime, cooked agave, and some herbaceous elements. The finish is exceptional here.
It has taken me at least 25 - 30 minutes to extract as much aroma and flavor as i did• Visual: Clear w/ clear medium edge. Really coats c, great viscosity • Initial Nasal Impact: Prickle and warming • Aroma: Honey, apple, melon rind, mild lemon, slight lactic, strawberry cobbler, white pepper, floral. • Mouthfeel: Coating w/ generous alcohol • Flavor: Cooked agave, honey, pepper, cinnamon, apple, melon rind, limestone. Tropical fruit on the back end. • Finish: Drying and long with pepper, tropical fruit (guava) and melon rind lingering. The anise (almost Chinese 5 spice) and some white chocolate (that malolactic, secondary fermentation really balances this HP blanco out) builds on the finish. • Overall impression: This is an outstanding HP blanco. The complexity keeps developing. Clean, crystal clear, fresh (sounds weird, but this tastes like it's fresh out of the mountains), tropical notes, anise, floral, melon rind, very bright palate. Although priced at $95, Alto Canto is so well made with such exceptional quality. After visiting the distillery, you realize the added expense it takes to produce at an altitude of 9000ft above sea level. I gave it a 5/10 value rating. I can't kill this on value because it is so damn good. Add 1 or 2 points if you accept the fact it cost more to produce at this elevation.
Bright nose with roast agave carried by the ethanol. On entry ethanol predominates along with some vegetal notes producing some slight bitterness. The finish is long and extended with the tongue and lips totally involved. rated blind tied for #5 with G4 108
Blind: Vinegar, alcohol, tart aroma that come across with a punch. Kinda plastic and green flavors. Medium finish with (too) heavy tears. Knocked for price as well. This profile wasn’t my cup of tea. Will need to revisit.
This has a unique and interesting aroma and flavor profile, and is a great example of what can be achieved with slow-and-low production techniques. Cooked agave, olive, brine, minerals, butter, and a hint of lactic - all of these are favorites of mine. I think it’s worth the price to get something made like this.
Nose: White Grape, Hay, Thyme, Citrus, Agave, Citrus, Earthy, Floral,Mint Mouthfeel: light-bodied. Palate: Cinnamon, Citrus, Agave, Finish: Cinnamon, Citrus, Agave, Clove, Brown Sugar Very unique finish! This is a very different HP and one that I really appreciate for what it brings to the table.
Nose: lactic / grass / earth / citrus / vegetal/ hay / sage / dough Taste: sweet agave cooked / pepper/ vanilla/ vegetal / apple / melon / lime / orange peel/ anise / spearmint/ sage / hint of baking spice / lactic / cream soda Finish: medium viscosity mouthfeel / slight oily feel in a good way - not sticky or gooey / lingering agave cooked, vanilla, anise, and pepper hold up pretty well as a band playing slightly different music to the same time signature This high proof blanco is 48%abv and does an ok job trading higher proof for more flavor. The nose is weak and seems to have aromas that don’t carry over well, but the sweet flavors and contrasting peppery notes are somewhat bold and engaging. The overall taste is good.
Very unique nose. Agave is at the front with a slight malolactic note. It is floral and citrusy. A touch of olive and brine. I love the taste. Very forward cooked sweet agave. Some alcohol and black pepper follow. The taste pulls out minerals, butter and mint. Nice creamy mouthfeel. Finish is sweet with a touch of alcohol burn. I like this one and look forward to the next pour
I know a lot of connoisseur have rated this high. Well made additive free high proof blanco, not my flavor profile, not bad. A little green and vegetal, light pepper and mineral notes.
Aroma of citrus - Meyer lemon - and then havarti cheese- and then an enchanting savory character like grilled meat. Super complex. Reminiscent of the excellent Siempre Vivo HP blanco. Very juicy mouthfeel and more viscous than most - even other high proofs. Tastes like a salted bell pepper and melon salad, topped with hazelnuts or similar. Very unusual tequila and one that needs to be savored and reconsidered over time. Every sip brings a different flavor note. For me, too dynamic for cocktails, but an intriguing sipper. Not usually my custom, but I’m going to try a tiny chill on this next time. Astonishing effort for a first batch.
Aroma: asparagus, thyme, oregano, bell pepper, raw agave, and floral. Flavor: mint, pear, melon, black pepper, lemon zest, and minerality. Finish lingers for a while and has almost zero burn which is amazing for a high proof and texture is silky soft and clean. Very refreshing even. This could rate in the mid 90s if it wasn’t for the price. This was a gift to me and I’m not exactly sure what retail will be but I saw the regular blanco online for $80. Assuming the high proof is the same if not more that just seems a little steep for me but still worth buying considering how good and unique this bottle is.
Nose: Flinty minerals and wet crushed gravel. Penetrating sweet agave, traces of cookie spice. A floral undertone. Crisp alpine smells: pine needles, decaying leaves, moss on a damp forest floor. Flavor: A short explosive pop of sweetness, white pepper and spice. A tease of sensations that is followed up with buttery salinity on the palate. Hints of a higher proof are felt along the journey through the pharynx and esophagus. There is a silky quality as well. A perfect balance of sweet vs heat. In brand literature, this expression is suggested for “cocktails and mixed drinks”. But in my book, this is a top shelf sipper.
Tried this at lotecito Dec 1, 2023 My notes: Agaves from Los Altos Produced in Mazamitla distillery at 9000 ft elevation where it's cold, and rains a lot so it's green, lots of pine trees. First batch! Cooked in small brick ovens Slow and low = 48 hrs Tahona crushed Fermented in wood tanks with fibers and wild yeast /open air 2x Distilled in copper pots Unfiltered It's high proof 48 abv, so let this open up and take ur time with this. There's so much going on, and it changes as u let it sit. Very complex! At first I got the alcohol and some brine, along with something I couldn't quite describe = Grover said sauerkraut. Yes! That's it! It has a natural sweetness with some funkiness, some pine notes, although not excessive, and it continues to evolve. I want to revisit for more notes. rated 88 pts 10/2024 tasted blind in the TMM high-proof blinds rated 86 pts adusting rating to 87 (avg of the two tastings)
I had two main concerns before deciding to purchase this tequila: the proof and the price. However, from the very first sniff and sip, I was pleasantly surprised by how smoothly and silky it went down. The nose is full of rich, sweet agave with no harsh ethanol burn. On the palate, it mirrors the nose beautifully sweet, buttery, and mouth coating in the best way. This blanco is exceptionally well-balanced with a long finish, with just enough pepper to complement the sweetness and fruitiness without overpowering them. It finishes with a graceful warmth, elegant and refined (Surprise this is a highproof) Truly a standout high-proof blanco, and I can only hope the distillery never changes this recipe.

Bottle: LOT HP-0724, Bottle No. 878 Appearance: Clear Nose: Cooked agave, vanilla, citrus, lime, lemon, orange, flowers, lavender, honeysuckle, gardenia, wet earth, minerality, limestone, butter, yeast/dough, lactic, brine/salinity, white pepper, herbal, and a touch of sage…reminiscent of a Dreamsicle after lunch in an Italian cafe Palate: Cooked agave, yeast/dough, lactic, olive, brine/salinity, butter, toasted bread, herbal, anise, fennel, flowers, wood shavings, minerality, wet earth, vegetal, bell pepper, jalapeño, white pepper, citrus, and melon rind…a funkier, mustier transition Finish: Black pepper, cinnamon, vegetal, jalapeño, brine/salinity, and olive….long, warming, spicy finish with medium viscosity Overall: This is a very interesting pour. What started off like an eating dessert surrounded by flowers after eating crusty bread on the nose was followed by charcuterie board savoriness on the palate and ended with a few spicier bites. This significant complexity was accompanied by a near total lack of alcohol presence and the packaging was absolutely stunning. All things considered, this is a winner.

Cooked agave, black pepper, brine, no lactic notes, some cinnamon and fruit Finish: long and hot with all that complexity lingering. Nice, maybe expensive, but if you like a clean and bright but complex tequila this is great.
Nose: fruity, peaches, cooked agave, and lactic. Palate: Same as above with added hay, vanilla, and mint. Finish: medium, the agave, lactic and fruit flavors linger! Overall, not phenomenal, but good! Worth a try if you see it at a bar! For the price point, I would opt for something else though! ~$90

Very aromatic, exciting and enticing. Sweet tingling mouthfeel, peppery, long finish and making you drool to drink more.
Soft nose; wet cement, grass, earth, brine, pimento. Bright and clear in the glass. Smooth and silky mouthfeel. Agave sweetness with citrus tones and a bit of a “bite” deep in the throat. Cinnamon-spice lingers through a long, dry and satisfying finish. Very, very nice!
Nose is cold like menthol, I get sweet agave. Some peach and like strawberry jam kinda appley and lemon Taste is got a nice funk Fig, lemon, rose, black pepper, agave, earthiness
