Aroma is with pronounced anise, distinct sweetness indicative of this NOM, vanilla, scathing ethyl, and a lift of citrus. Palate: Peppermint and anise lead the entry, followed by a savory snap of salinity. Kiwi–lemon citrus brightens the mid-palate while plum and subtle berry add variety. A measured crack of pepper provides challenge without overwhelming the fruit, while the same constant overt sweetness, which is indicative of this NOM, stands out. Finish: Medium in length, with clinging cooked agave, saline, and pepper.
