Palate & Mouthfeel: The viscosity stays on the lighter side - despite the chatter about this being thick, it doesn’t land that way for me. It opens clean and quick with sweet agave and jalapeño pepper, carried by that same fresh veg brightness. A hint of anise surfaces as it moves, sharpened by a lively streak of citrus that keeps the pace energetic. Finish: The sweet and spicy interplay hangs on, with the pepper lingering and lighting up the palate in a steady, tingling way. It’s a finish that stays active without overstaying. Final Thoughts: Give this one a little air and it settles into a layered, expressive HP blanco. A very solid showing, and one that rewards patience with depth and flavor.
