Nose: Agave, dry cedary wood, almond, molasses, pear, vanilla. There’s a funky, almost rummy sweetness tucked into the fruit- likely a result of the rum and champagne yeast combo layered with French oak. Palate & Mouthfeel: Medium slick mouthfeel. Sweet cooked agave up front, followed by barrel oak and soft vanilla. Notes of pralines & cream build into jalapeño, cinnamon, and a touch of orange peel. More savory and grounded than the nose suggests, in a way that adds depth. Finish: Creamy, with a lingering mix of barrel spice and agave. Final Thoughts: Very well balanced throughout. The nose leans funky/sweet while the palate reins things in with warmth and structure. That yeast and oak combo gives it character without tipping into novelty. The finish is smooth and satisfying, closing the loop nicely.
