On the nose I get cooked agave, lots of earthy minerality, green herbal notes, white pepper, On the palate I get some nice sweet agave, punchy black pepper, some orange and lemon peel green herbs, and a nice salinity to finish it off.

The brand was founded by Juan Coronado, a mixologist with a long career in the food and beverage industry and someone that is focused on community and sustainability at Mijenta, Mike Dolan, the lead investor, and brings his extensive experience as the former CEO of Bacardi to the brand, Elise Som, is the director of sustainability, and she leads the brand's design, branding, and has a commitment to transparency and sustainability, and lastly, Ana Maria Romero Mena, the Maestra Tequilera, and is responsible for the tequila's creation. Maestra No. 2 is another innovative project from the talents of Ana María. This Blanco is a blend of 5 different Tequilas from the 5 different states as parts of the Denomination of Orgins. Jalisco, Michoacán, Nayarit, Guanajuato, and Tamaulipas are those 5 states. While every state and region grows Blue Weber Agave, each region offers different tastes when producing Tequila. These different biodiversity traits produce different and distinct aromas and flavors. Estate grown agave were chosen from the 5 states, with Jalisco being from the Valley. The agave were cooked with a Low Pressure Autoclave before being macerated by Roller Mills with Deep Well Water being added. The collected juice is fermented in open-air Stainless Steel Tanks without agave fibers being added. Once fermented, the Mosto is distilled twice in Stainless Steel Pot Stills. The finished Tequilas are then blended and proofed down to 40 abv before bottling. Aroma: Earthy Cooked Agave greets the senses. This is followed by Vegetal and Anise driven notes. There are other Herbals that can be detected, like, Mint, Thyme, and Sage. There is also a spicy Black Pepper and Cinnamon touch that also has a smidge of Nutmeg. A slight Citrus aroma emerges the more this opens up. And this definitely has a nice Minerality too. Taste: A spicy Black Pepper and Cooked Agave note starts this off. It is followed with Anise and Olive for a slight bitterness. A sweet Citrus brings this back from too much bitterness. As this settles softer notes of Mint and Sweet Cinnamon mix in. And in true Ana María fashion a nice Floral kiss invites for another sip. Finish: A Roller Coaster of Spicy, Bitter, and Sweet last for a good long run. TMM--85 Salud!!!

kind of "unremarkable". nothing really stands out. it is good, but really lacks depth and complexity for all the work that went into it. perhaps that was the goal with this one: balance

Nose: Cooked agave, floral, nutmeg, minerals. Taste: Cooked agave, minerals, black pepper, floral, nutmeg Finish: black pepper and a little bitterness Overall: I really like the nose on this one. It's somewhat similar to the standard Blanco but maybe a little bit more refined. The flavor is good as well, but nothing that gets me terribly excited. I wish I had some of the standard Blanco around to do a side by side, but it seems quite similar just going by memory. It's a good tequila but lost some points on value for me.

Immediately on the nose, smells like well tequila. It gets better the more you drink it but overall highly disappointing
