The aroma presents an assertive, earthy profile, opening with fresh-cut grass and petrichor layered over cooked agave’s, raisin-to-prune sweetness. Vegetal notes reminiscent of celery, sage, pine, a faint ethyl lift, touches of lightly toasted coconut, and a subtle ashy undertone. On the palate, petrichor takes command, framed by verdant notes of green pepper, oregano, thyme, celery, grassiness, and pine-cedar tones. Earthy agave is prominent, with butteriness, anise, and peppermint adding contrast. Bright citrus notes flicker and roll across the tongue, adding zest. The finish is clinging and lasting vegetal intensity, pepperiness, grassiness, freshness, and earthiness.

Incredibly fantastic. I get funk and agave on the nose, buttered popcorn in the body, and a great finish. If you can find this, get it.

El Caballito Cerrero tequila azul blanco unicornio 55%, LOT: UNI-A-02, bottled on June 2024, I was told this unicornio version is or will be produced 2 to 3 times per year. On the rear label it states: This "one-off" still strength batch of the estate grown agave Azul Tequilana yielded a total of only 180 liters. At 110 proof this special edition from 14th and 15th generation father and son carries on the proud tradition of "vino mezcal" that has been theirs since the 16th century." Wow! Tasted on 9-8-24. Color: a tad of yellow hue. Aroma: light sweet cooked agave, light sourness, slightly herbal, hint of earth, acidity, hint of citrus, light raw agave, minty, hint of dirt, hint of smoke. As time goes by the cooked agave note becomes slightly sweeter. Hint of spiciness. Palate: confirms aromas perceived, good sweet sour and earthy balance, alcohol sensation is lower than its 55% abv., ends spicy with light smoke sensation through my retronasal. Finish is medium to long, cooked agave with a hint of spiciness, hint of smoke, light chili sensation with light earthy sensation, light dirt aroma with light agave sweetness persists.
