Black Sheep Tequila was founded in 2000 between friends Jason Charles and a 5th generation Agave Farmer, Ralpho. The chosen brand name of "Black Sheep" reflects the founders desire to forge their own path. Black Sheep is truly a single- estate grown tequila brand. Owning a 1,600 acre ranch in the highlands of Jalisco. Ray McBride is now CEO of the brand and works tirelessly to introduce more to their expressions. The production of this begins in their estate fields where ripe Agaves are chosen with average ages of agave are between 7-10 years. Piñas have cogollos removed before being slow-cooked in Stone/Brick Ovens for hours. The Cooked Agaves are macerated with Roller Mills with Deep Well Water being added before going into Stainless Steel Fermentation Tanks. Open-air Fermentation without Fibers and Propiertary Yeasts are added. Once fermented the Mosto is twice distilled in Stainless Steel Pot Stills. After Distillation the finished Tequila is Aerated and Rested in Stainless Steel Tanks before being Filltered and Bottled at 40abv. Aroma: Two things hit you immediately. Those two things being the smell of Sweet Cooked Agave with a Roasted Sweet Potato quality and the scent of Alcohol. The Alcohol scent isn't so strong to be intolerable, but something I get often on Stainless Pot Still produced brands. As it opens up, the warming touches of Cinnamon and Baking Spices mix with a combination of Black and White Pepper. A identifiable amount of Lemon Citrus is present. There is a touch of Earthy Creaminess. Both Spearmint and Peppermint play a role mixing with a sparse amount of Vegetalness and Raw Agave. Taste: Earthy Cooked Agave mixes with the Lemon flavors picked up in the nose. Black and White Pepper give this some spiciness that it fades, Cinnamon and Nutmeg become present. The combination of Spearmint and Peppermint carry over to the taste along with a touch of other Herbals like Basil and Oregano. As this continues to open a true Vegetal flavor enters along with a light Floralness. Finish: The finish runs long with a lingering Black Pepper and Earthy Agave note that continues to bring the Mints along. TMM--81 Salud!!!
