AMM Blind Tasting: Aroma: some olive brine, citrus, white pepper, honey and cooked agave. Palate: buttery most full-bodied so far, not a whole lot going on but some green pepper, celery, and agave. It’s clean, but not overly complex. Finish: pretty short, clean not too much heat.

On the nose there’s a lot of cooked agave with some faint floral vapors. There’s minerality, natural sweetness and some muted lemon zest. It’s clean and pleasant. I taste the cooked agave. It’s up front and followed by the citrus zest. The sweetness is balanced with the other flavors. The zesty black pepper starts to kick in. Overall this is a solid blanco. It’s agave and citrus with some nice zest.

Nose: Agave opens warmly, edged with cinnamon and a subtle vinous quality that gives depth. A hint of citrus lifts the profile just enough, while honeysuckle adds a delicate floral touch, keeping the aromas both inviting and refined. Palate & Mouthfeel: The texture is medium oily, carrying earthy agave front and center. White pepper drives the spice, joined by a savory leather nuance and a faint herbal streak. The balance leans savory but stays tethered to the agave throughout. Finish: Savory tones linger, and as the spice tapers off, a soft yeasty impression remains that is reminiscent of rising dough. Final Thoughts: A tequila that balances earthy and savory elements with a gentle floral lift. The yeasty echo on the finish sets it apart.

Rated blind with AMM: Mild fresh aroma that follows with flavors of citrus, sweet agave, and white pepper. Creamy with a nice tingle. I’ll drink more of this. 89 Pear, mint, brine, minerals, slightly metallic twang on the finish that takes a couple points. 85

Wow! I’ve been on the lookout for this one for a while. Tasting it at Quinta Don Jose in Tlaquepaque. Alquimia Blanco is different and delicious! Aroma is rich with baked agave and fresh baked bread, maybe pan dulce. And there is an undertone of alcohol. There is a “softnesses” to the flavor that I’ve never experienced— not weak, it’s full flavored and complex but subtle and wonderful. The finish is similar, very smooth and for a moment I thought short, but I was mistaken. The finish slowly built intensity and brought back some of the nuanced flavors from the aroma and taste and definitely long lasting. I will stock this at my bar.

LA Tequilafest - nosing and tasting in small plastic shot cups at an outdoor event. Looking forward to tasting in a better environment in a proper glass. Update - bought a bottle and can now enjoy in my preferred Glencairn glass.

AB/01/19 11/03/19 Initial nasal impact is warm baked bread. Cooked agave followed by (after a deep inhale) some cinnamon that has been in the spice rack for awhile. A bit of grapefruit citrus hits. Mouthfeel is buttery with sufficient heat after it leaves the tongue. Flavor is amazing. Cooked agave, earth, cinnamon, some mineral and floral notes. There is a hint of licorice at the end. A classic blanco. The finish is medium to long and perfectly balanced. My review could have been narrowed down to one word: Wow This is a must have for any blanco lover.

Aroma : Cooked agave and pear. Taste : Cooked agave and pear show up here too. There is also a small degree of black peppery spice, but not much. Oily texture. Finish : Long with stronger emphasis on cooked agave and and pear. This is a phenomenal example of a very simple and uncomplex, but richly flavored tequila. Blancos like this and G4 are a must have.

Wow, what a nice tequila. Single estate and done the right way using hornos and not prematurely harvesting agaves. Cooked agave in the nose and front of the tongue, followed by citrus and herbaceous notes with black and white pepper. Olive brine finish. Wonderful juice.

The aroma is wonderful. The fresh baked agave really shows well. It's worth a couple extra sniffs, because it's that good. This is a somewhat rich mouth coating blanco. It's like a gift to your tongue. The finish does not disappoint. This is just the blanco. I can't wait to retaste the other expressions.

Love this blanco's nose and flavor. You can really taste Don Adolfo's amazing agaves. The finish is a little harsh, but I'm sure that goes away with a few drinks!

All in all a blanco that is up there with the best of them. Nice balance of citrus and pepper, a little of each but in between is cooked agave which I actually had along with it. Not the best value brand but for the price it's worth it.
