He will, however, make an exception - ¡con gusto! - for the extraordinary extra añejos his distillery just issued, the five-year-old "Suro" aged in spicy American oak from the Ozarks, and the seven-year-old "Piñera" aged in French wood.
Nose: Carmel, Oak, Agave, Butterscotch Cinnamon Black pepper Mouthfeel : Light - bodied Palate: Nutmeg, alcohol, Carmel Black pepper, raisin Finish: Carmel, toffee, raw agave ( I dont typically pick up on this on the finish) Black Pepper Im limited in my experience with Siembra Azul. This is balanced. I feel like Im getting maybe more oak than other flavors bit I feel that otherwise, I'm getting a lot of flavors without any single one overpowering the others.
