Nose: Agave jumps out first, followed by wet stone and a touch of honey. Mint adds a fresh lift, while anise brings an undercurrent of depth. There’s a groundedness here, like rain on warm earth. Palate & Mouthfeel: Sweet agave is the anchor, but it doesn’t stay still. The mouthfeel is strikingly full - almost chewy - which makes me wonder if this was fermented with fibers. Chili pepper heat builds steadily, never sharp, just insistent. Grapefruit cuts through with a citrusy edge, joined by a faint smokiness. The minerality shows up again, tethered to a dry, earthy base. Mint resurfaces mid palate and lingers. Finish: Spicy but measured. The heat fades cleanly, leaving behind a trace of that minerality. After a few quiet moments, a floral note unexpectedly drifts in - soft and perfumed, almost like lavender. It’s fleeting but memorable. Final Thoughts: This isn’t for casual sipping. It demands attention, and if you give it that, it rewards in layers. Structured, thoughtful, and full of character. I love this one. *Note: After writing this review, I found that Destino uses both fermentation with fibers and without.

Wow, another home run for Cascahuin! Roasted agave all the way from first sniff to last tingle on the tongue. It’s a bit boozy but that fades quickly and it has an elite finish that leaves all the warm and fuzzy. The only downside to this is the price, $200+ for a bottle of blanco is getting a bit absurd, I wish this was more approachable.

Very easy to drink with loads of agave up front, mixed in with tad smoke, loads of minerals, earthiness and vegetal. It has a backend of lavender and black pepper.

A very complex blanco from Chava. This blanco has a lot going on in aroma and flavors. Had this as a 2 oz pour in a snifter at a local restaurant at a reasonable price point considering the cost of the bottle. The smoky notes definitely come through from the Earthen pit in a good subtle way. Nose: cooked agave, vegetal, Earth, minerals, citrus, lavender, smoke, and herbal. Palate: cooked agave, vegetal, citrus, Earth, minerals, smoke, black pepper, herbal, and lavender. A blend of different techniques and methods from Cascahuin coming together to make a beautiful nose and great complexity.

Great nose with cooked agave, vegetal/herbal and citrus. Finish has vegetal notes with cooked agave and nice heat. Could easily go into the 90s on this rating. The price pint held me up a bit at just over $200

A blend of different Cascahuin techniques, it’s the most underground pit cooking that pokes through the most on this one—definitely carries a touch of smoke through. Sweet, earthy, mineral, and smoky.

Another banger from Cascahuin. Great floral nose, hint of mint and anise. Flavor of sweet cooked agave, lemon zest, anise and a hint of smokiness. Definitely a rare and pricy bottle but the quality is certainly there. Very well done!

This drinks really really well. The flavor definitely gives me a lot more than the nose. Delicious and beautifully executed. Took off a couple of points for price being a bit steep in today’s HP blanco market

Kind of a neck pour. I opened the bottle 3 days ago and gave a friend a 2 oz sample but didnt try it. So I'm trying it now... Nose: Grassy, minerality, cooked agave, anise, mint, earthy with a mild smokiness and a little alcohol Palate: sweet cooked agave, smokey, vegetal, mint, citrus and pepper Finish: warmth with citrus and pepper Legs are gorgeous PS tasted a little more with mac n cheese, and it paired really well!!!

I did a high-proof tasting at a bar in Puerto Vallarta. Aroma of cooked agave, butter, minerals, herbal and a hint of smoke. Flavor of cooked agave, smoke, herbal and vegetal. Medium-long finish and no high-proof burn.

Another great bottle from Chava and the team. I was able to get from the distillery so the price was right. If you’re paying crazy secondary prices then it will def change the value component but a delicious blanco as Chava reminds us how incredible he is.

Beautiful nose of agave. Floral, minerality, minty, jalapeño, green pepper. The best nose you can imagine. Beautiful palate of agave and then jalapeños and peppers. Beautiful mouthfeel can’t wait for a bottle of this.

On the nose, first impressions: cooked agave, nice minerality/an earthiness to this one, can smell the terroir, some herbal notes, maybe parsley/oregano. I will say it was somewhat muted on the nose for 49% to me. On the pallet: nice sweet cooked agave, lot of minerality, some baking spices/anise, some buttercream/caramel notes, nice medium finish, nice mouthfeel, not too thin, not to oily. Ultimately a quality 1123 product, very tasty but very also unique for them recently, maybe by design. Id easily keep it on the shelf for MSRP/secondary is a bit steep. Bottle opens up a lot after 24/48 hours, second sitting was much more enjoyable than first sitting.

Tried this at the Cascahuin distillery Nose: clean, Cooke agave upfront. A lot of herbal notes, very strong in the nose Palate: well balanced and clean. Sweet agave up front, minerality, spice, some creaminess Finish: medium-long length. Agave with hints of grass, curious, smoke. Not overly oil with some texture Loses some points in value just because it is extremely overpriced at liquor stores if you can find it but that’s no fault of Cascahuin’s. Not sure what it retails at so I could be wrong

A really top notch expression. It’s hard not to compare it to the “11 Brix” which I found to be a touch better top to bottom, but this is a fantastic drinking experience in its own regard.

Nose. Cook agave. Brine salt. Citrus. Cheese Taste. Heat off the hop which calms down time in the glass. Salty citrus. Cooked agave. Hint of anise. Hint of vegetal Finish. Nice long tingle. Would be nice warmer in the winter. As said not impressed with the price point and it really cuts into the enjoyment lol. Hard to separate quality vs price.

There’s a really interesting funk embedded in the flavor of this one that a love. Tons of cooked agave, and a verrrry long and rewarding finish. Insane mouth feel with longer legs than I’ve ever seen in a tequila. This bottle is by all means excellent, the price point loses it some points as I’ve seen several others say. I’ve only seen it for $300 out the door which is just ridiculous. If this came out to like 180ish it’d easily be north of a 90.

Not as funky as brix but still has some funk. Earthy dry and sweet potatoes brine and maybe some smokiness . Price at almost$300 hurts the score. I can’t ignore this price and how hard it was to find it. I’m fortunate to have friends that like to share. The overall score doesn’t tell the whole tale
