Nose: starts with minerality, vegetal and floral notes. then i got agave, citrus and some pepper Palate: agave, citrus, minerality, pepper Finish: soft and quick (i wanna say smooth = in a good way) with a fizzy zing (maybe the yeast?) Overall: clean, well-balanced and easy to sip. Maybe too easy! p.s. I just read that this uses sake yeast for fermentation. I really like it!
Sergio Cruz did it again, this time using sake yeast. It's absolutely amazing, a nice floral soft sweet fragrant fruity presence...I really like this one. Easily an 89.
