Due to my involvement in a campaign with these folks, I withheld my review a bit longer as to not influence anyone else. Nose: Eucalyptus, Chamomile, Citrus, Cashew Palate: Pepper, Grass, Lime, Eucalyptus Finish: Eucalyptus, Pine nuts, Earth This is one of those things; you've got a polarizing spirit here. That Eucalyptus is not going to work for everyone. In this case, Eucalyptus is grown nearby and it definitely has an influence on the open-air fermentation. You're gonna have folks that love that and folks who hate that. The story of what happened during the cooking process (with the oven shut off and then subsequently cook the agaves for over 65 hours) is a unique one that makes this expression even more unique. The price point will definitely be a non-starter for some but I was happy to be able to try it and greatful of the brand for sending me a bottle. They will have more projects in the near future with the same PX casks that were used on the cascahuin House of Rare and 55-25 releases. This brand will most certainly be on my radar.

Not sure if we had bad sample or not but not really for me. Nose is some agave, also some licorice, tootsie roll, earthiness to it, decent. Pallet is sour, some agave, taste is off, high pressure autoclave like to me, just not my profile personally, would pass

Received a sample from Keith at Agave Swappers. Tasting in a large bowl vessel with Glencairn like chimney. This is my favorite tasting glass because it gives the tequila ample room in the base to open quickly and rises to the chimney that closes all the aromatics tightly at the rim. Nose: First I get lots of citrus, a light cooked agave, some alcohol. I was expecting more alcohol but I’m not and I like that, then some pepper and mineral earthy herbal notes! Taste: First thing is cooked agave, a light oily taste that adds to the viscosity. Some heat and white pepper then citrus and a brininess kick in-and then nice herbal notes to round out the blanco. Finish: The finish is medium to log with lingering sweet cooked agave and white pepper that the oiliness of the tequila allows for coating the palate… Overall this is a very enjoyable blanco that delivers!

The aroma opens with cooked agave, toast, and almond, backed by earthiness and a noticeable ethyl sting. A faint thread of lemon citrus adds a bit of lift. On the palate, green agave and toasted almond lead, followed by mixed citrus, hints of berry, and fresh lemon citrus. A slight floral note and a touch of brine snake through. The finish is citrus and light fruit, leaving behind clinging toasted-almond earthiness and a persistent pepperiness.

Overall solid bottle! Light and crisp, and very pleasant to sip. Complexity and finish were decent but not for the price point. I think in a regular bottle, so the price isn’t so high, this would be around a 90 for me. I put the price at a 6.

Price alone, this is a real gem, hand blown crystal bottle, but it’s what it is in the bottle, the founders cut, 68 hour cook time, wild yeast fermentation, presented at 46 ABV, with layers of complexity. Only 777 bottles. This is a unique offering for sure.
