The first sip hits with raw agave, wet earth, and cracked black pepper it’s clean but chaotic, like it’s pulling you straight into the soil. Mid-palate shifts fast: cooked agave, roasted sweet potato, citrus peel, and a sharp herbal bite of sage and green peppercorn. The minerality isn’t subtle, it’s structural, like the land itself is in the glass. Then it breaks free again! The finish runs long and super wild white pepper heat, limestone dust, zest, and faint smoke but it doesn’t just fade. It feels like an agave field dream pulling you under, wrapping you in warm soil and night air, like a lover grabbing you close and sinking you back into the earth!
