Light nose of agave, minerality, earth, citrus. Definitely taste the 1123. Earthy, mineral, lime. Good finish but thin. I think I prefer the Cascahuin Tahona.

Nose: Starts with a blast of petrichor, wet stone and damp earth - followed by a nice mix of cooked and raw agave. There’s a green, raw vegetable note in there too, along with bright lime zest. It smells alive, like a field after rain. Palate & Mouthfeel: Sweet agave upfront, but the dominant impression is floral - and I mean floral. It’s like biting into a whole spring bouquet. There’s still some earth, cinnamon and veg underneath, but the flower shop vibe is center stage. Mouthfeel is clean and bright, with just enough weight to carry the flavors. Finish: Those floral notes hang on, long after the sip’s gone. Clean, persistent, and very aromatic. Final Thoughts: There’s no doubt this is a high quality pour, but today the floral character came in hot. It felt natural and fresh, but the intensity kind of bulldozed everything else. I’ll need to come back to this one on a different day, maybe with a fresher palate.

Slightly fainter yet still aromatic, with earthy and herbal notes, and slightly grassy, citrus aromas. Also has aromas of sweet cooked agave, and a hint of cucumber and anise. Light and sweet across the palate, with a pleasant agave forward profile, coupled with an earthy citrus kick, and some floral notes. Ends on a mellow finish of citrus, anise, cinnamon, and an earthy herbal medley.

Nose: agave cooked / vanilla/ earth / anise / pepper/ butter / banana/ apple / grapefruit/ tea / salt Taste: sweet agave cooked / vanilla/ anise / pepper / cinnamon/ minerals / banana/ apple / lime / orange peel/ mint / tea / cream soda Finish: very low viscosity mouthfeel / costs the tongue very well, but not much coating over the whole mouth / lingering sweet cooked agave, anise, pepper notes, cinnamon carry through in a very harmonious fashion until the very end. This blanco is fantastic. It has harmony and balance and offers a lot of flavor despite only being 40% abv. One of the best sipping blancos I’ve had in a while,

Cooked agave on the nose, light citrus notes. Taste and finish are best described as clean or fresh. Wonderful cooked agave and a light pepper finish. Yet another win from NOM 1123

Very nice, Batch 014. - nose is agave, pepper, spices, floral, very 1123 esq- on pallet, more of same, full bodied, nice heat out front, but not too much, middle and end are pepper and agave, finish is short, wish was little more oily/thick, but all in all great blanco, easy sipper

Intense agave with minerals and brine that I enjoy from a well-made valley blanco.

This was batch 11 and had the updated label. I love the nerd stats on the back including the name of the Lead jimador! N- Agave, minerality, earth, ripe citrus T- Caramelized agave, butter, sweet peppers, black pepper, mint, raw honey M- Oily and leggy in the glass F- Medium length and softly sweet V- Tough to say because I had to have this shipped since I live in Michigan. It was an amazing Blanco so I still think it holds value

Really like this Blanco from one of my favorite distilleries-Cascahuin. Bright citrus and cooked agave notes. Very clean, nice finish

Agave on the nose and minerality like fresh water … cooked agave on the taste with some sweetness… and a bite like black pepper but the finish is short.

Not as much of a fan of this one as I am the siembra azul. But not bad. Agave, flowers, little minerals, little honey and light peppery finish.

This is a new favorite. Rich agave and pepper in both aroma and flavor. A warm minerality, with green grassy favors. Outstanding tequila.

Lote: 119 160821 Batch: 10 Warming initial nasal impact. Cooked agave, lime zest when first poured, then gives way to brine, olive and mint dominates the aroma followed by wet limestone and white pepper. Buttery mouthfeel with sufficient alcohol. Flavor is exactly what you look for in a valley tequila: cooked agave, olive, brine, mint, pepper and chalky limestone. Some savory herbs (sage and oregano) are present. All these flavor components ride out on a nice long peppery finish. Outstanding blanco. Epitome of a valley tequila.

Had potential but tasted too rubbery from rubber cork and short dry finish...

This is what I want all Blanco’s to taste like, tons of agave from start to finish. Long and rich finish that keeps giving, this tequila is creamy in texture, really lovely.

Wet grass, citrus, and agave forward on the nose. Pear, and agave heat on the taste. Smooth, but hot Long agave finish. Great taste

Siembea Valles Blanco is an excellent example of blanco tequila done right. Using 7 year old agave from the Lowlands this tequila has a great nose, taste and finish. The green agave and mineral notes punch through while I detect a floral taste along with citrus and a hint of pepper. The finish is smooth and short. This tequila pairs well with more tequila!

From a blind tasting. Baked agave on the nose and loads of citrus in the mouth. Finish fades a little bit quickly but overall very enjoyable.

Rated blind after aeration. Yikes! Powerful hit of antiseptic off the top of the glass! This dissipated after opening up but remained present throughout. Agave notes could be detected later. Thick and chewy with a big pepper explosion right away. There are some agave/herbal/citrus flavors that can be noted, but there is a large mineral/metallic component that became less pronounced toward the bottom of the glass. The finish feels mild and short after the aggressive nose, pepper effect, and flavors, but a nice pepper tingle did linger. This has a lot of machismo—bold, brash and kind of reckless. To be consumed quickly in lively company (preferably after it has had plenty of time to open up). This behaves like an overproof with its big differences between the top and bottom of the glass. Not necessarily overpriced for the market, but there are many many better options out there at this price and below. The antiseptic nose and metallic notes dragged the tasting scores down, creating knock on effects for value/buy/recommend.
