Dried fruit, baking spices, caramel, sweet cooked agave, a nice balance between barrel and agave, medium finish
Surprisingly well-made and balanced coming from this distillery. Expected less refinement, but the execution is solid and clean. Nose: Cooked agave, earthy minerals, light herbs a little cinnamon . Flavor: Sweet cooked agave, wet dirt,mild pepper, subtle herbal notes and cinnamon. Finish: Clean, smooth, lightly mineral with gentle warmth. Overall: A traditionally produced Valley blanco that drinks softer and more polished than anticipated. Not overly expressive, but well-crafted and agave-forward.
