Aroma - earth, mineral, green apple, cinnamon, baked yam, Flavor - cinnamon, cooked agave, vanilla, mineral, wet dirt I like this a lot for how approachable it is. There’s a nice texture and the flavor lingers a little. Horno cooked, tahona crush, stainless steel fermentation, copper pot still.

Surprisingly well-made and balanced coming from this distillery. Expected less refinement, but the execution is solid and clean. Nose: Cooked agave, earthy minerals, light herbs a little cinnamon . Flavor: Sweet cooked agave, wet dirt,mild pepper, subtle herbal notes and cinnamon. Finish: Clean, smooth, lightly mineral with gentle warmth. Overall: A traditionally produced Valley blanco that drinks softer and more polished than anticipated. Not overly expressive, but well-crafted and agave-forward.
