I really like this blanco! The nose cooked agave, earthiness I get a little funkiness and some citrus fruit. Taste I get the agave, orange, some mint and some cinnamon. Great Finnish!!

Love that their standard presentation is 46% abv. Traditional processes including brick ovens, Tahona, wood fermentation, and barrel rested. Taste: sweet agave, citrus (orange/guava), lactic (cheese) and mineral notes.

Cambio is a formidable newcomer in the tequila sphere. I had the great privilege of sitting down with founder John des Rosiers to taste through the entire range of this inspired new brand. Placing emphasis on an innovative fermentation method, a notable distillation proof, and unique barrel characteristics this brand may well disrupt the status quo of the contemporary tequila market. Cambio’s blanco expression comes out the gates swinging with a pronounced citrus on the nose along with guava, kiwi, and peach. On the palate is a light minerality through line with kiwi, lemon zest, citrus peel, saline, overripe(slightly sour) pineapple juice, a malolactic cheese with heavy pepper on the back end with a mid to long finish. Cambio’s blanco expression stands on its own merits. An excellent citrus forward blanco with a lovely rocky minerality and fun malolactic notes, but for me it tastes tailor made for aging. Have found this blanco for 31$. Outstanding value

There’s so much going on with the aromas and flavors I may need to revisit. I get sweet cooked agave with some mint, and only a slight hint of lactic funk. Complex for a blanco. I’m curious what this tastes like before resting in wine barrels. Update- Although I enjoy Cambio’s aged expressions, I’m not a fan of the blanco (white label). It’s achieving exactly what John intends adding texture and flavors, but I enjoy our classic blanco that are not rested in wine barrels. Now the cellar series (red label) El Corazon blanco is better in my opinion. Would love to try a pure blanco from Cambio.

Tasted in Glencairn Aroma: Lactic immediately on the nose followed by Sweet Cooked Agave. Citrus and Fruity notes of Tart Apple and Pear. Cinnamon notes. Mineral and Earthy. Vanilla and light Oak. Slight Herbal with a touch of Sage. Taste: Sweet Cooked Agave, Lime, and very Lactic out of the gates. Black Pepper with a Spicy touch of Cinnamon. Tart Apple and Pear are here, too. A touch of Anise brings a slight bitterness, but surrounding the other flavors, it's fine. Finish. Long Agave, Lactic and Black Pepper run.

Aroma is full of flavor! Agave, alcohol heat, rose petals and peach nectar. Really good! The taste is strong as well. Agave and a lot of black pepper. Spicy! The finish fades a little bitter but isn’t bad.

I love the concept but believe the execution could improve. Similar to El Tesoro and Fortaleza which both ferment in wood this carries that a step further and ferments in two types of wood, pine and oak. A slow fermentation at low temps is touted as a unique part of the Cambio process. The cooked piñas are macerated with a true tahona and distilled in a SS/Copper hybrid still. These hybrid stills are gaining popularity as pure copper is expensive. Distilled close to proof this is then rested for a short time in French Oak barrels previously used for wine. This smells more lactic than it tastes, elements of the barrel resting become much more apparent after sipping but this has an over arcing bitterness that holds the score back. Nice 46% presention carries a ton of flavor from the various production elements but after sipping and sitting with this for some minutes, it almost seems TOO busy in the mouth.

This is an earthy tequila with pepper and grassy notes. Plenty of minerality. Slightly malolactic. On the tongue I get agave and a bit of malolactic flavor. It is briney with alcohol and white pepper. It is good but not exceptional. I’d drink it again but there are many I would rather drink.

It needs some tuning as they move into new batches.

Very thick and juicy. Tons of legs in the glass. Cheesy/funky aroma riding on top of herbs and agave. Crisp taste of agave, pepper, and a lot of mint. Hides the ABV well. Really nice effort.

Cambio blanco Nose: leaving my mouth open when i smell this, and the nose is softer than when I tried it before, more agave. some funk/malolactic notes on the low nose, some alcohol on the high nose Palate: it is definitely better than the first time i tried it. But still not a favorite. Some cinamon, agave, funk/cheese, bitterness and heat.

Very malolactic on the nose. Cheese. Smells lovely On the mouth the cheese comes through to start and then sweetness of agave. This is great. All rounded out with the oak

Clear in the glass with some slight legs after a few light swirls. The aroma is cooked agave with undertones of alcohol. The taste continues with the agave with a bit of citrus which creates a sweetness that continues through the finish. The finish adds some cinnamon/pepper. I recommend because it has some interesting complexity and checks in with a very fair price. I picked this up at Total Wine so availability is also a positive.

Soft nose. Earthy with a hint of lactic-funk and some alcohol. Off-white in the glass with great tear adhesion. Silky / creamy smooth mouthfeel - highlight of the experience for me. Mildly sweet on the palate before turning sharply citrusy - bitter grapefruit and baking spices. The finish is oily, long and warm deep in the throat. Extra points for value.

The couple of times I’ve had Cambio I’m struck by how sweet the tequila is. It’s a pleasant sweetness that is kept in check by the nice bite that always seems present. I think the added proof does a little t of work. At 46% the slight heat doesn’t let the sweetness go too far. If not for the agave forward character of the blanco, might even think it’s too sweet, maybe a little cheating going on, but the raw agave seems to be doing the heavy lifting. The nose is pleasant, with lots of raw and cooked agave, and slight minerality. The finish doesn’t linger too long, at least not a strong presence, but hints of agave and some floral notes last a bit. But the palate is the main player here. Quick hit of agave and sweetness, are from and center. At the price point, it’s a very easy sipper, with enough complexity and just enough lactic funk to keep your attention.

A fantastic blanco. Very slight amber color (not super clear). Thick in the glass & mouth. Complicated aromas of cooked agave, citrus, lactic funk, earthy, floral, fruity & slight mint. Flavors of cooked agave, lactic, citrus, mintiness transitions to slight cinnamon & black pepper long finish. Online tasting w/ Tequila Report’s Jay Baer & John des Rosiers. Really?!? Six different yeast strains that combat wild yeast in wood vats? Super complicated.

Nose: Fruity, citrus, slight malic funk wanders on the back. Fast legs in my glass, very clean aroma Mouth: slick, oily, nice little white pepper heat layed with a nice cooked agave sitting on a citrus rind. The flavor stays, the heat stays. The 92 proof is good spot for this offering. I think if the proof went higher it would be too much. Very nice mouth feel. Like a coconut oil silk. Coats the walls nicely. The finish lingers but is not overpowering. It’s a consistent finish. Just fades slowly This is a sipper all day. And would probably make a fantastic Paloma with a bite. Excellent product cheers!

Soft. Oily. Sweet. Need to discover more of the agave and finer notes. It’s a more expensive Zumbador blanco. The Zume skews because it’s so damn cheap. It’s really good. Looking forward to to the other expressions.
